This Tiki cocktail stays close to its predecessor (Test Pilot), but turns up the volume with Spiced Honey syrup, adding warm spice. Grapefruit Fleur de Sel joins the Lime Leaf Tonic for a sharper, more layered citrus profile.

Jet Pilot

• 1 oz overproof Jamaican rum
• 3/4 oz overproof demerara rum
• 3/4 oz gold rum
• 3/4 oz Grapefruit Fleur de Sel
• 3/4 ounce Lime Leaf Tonic
• 1/2 oz Spiced Honey
• 1 dash absinthe
• 1 dash Angostura bitters
• Garnish: maraschino cherry

-Add all ingredients into a blender with a cup of crushed ice and blend on high until combined but not smooth, about 5 seconds.
-Pour into a double old fashioned glass.
-Garnish as desired.
